Delicious Dill Pickle Dip! yummmmy

So I totally remembered this delicious dill pickle dip my mom used to make
and i whipped up a batch. I still to this day will never buy
the processed tasting store bought dips in the dairy aisle lol
This recipe is my go to dip when I'm craving a flavor packed
creamy dip to accompany my potato chips, I'm sure you
could use it for other things but this is how I like it best haha
 
 

Ingredients:

  • 1 cup mayonnaise
  • 1 cup sour cream
  • 4-5 dill pickles diced into small chunks
  • 1-2 tbsp dill pickle juice
  • 1/2 tsp dried or fresh dill
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • black pepper (optional)
 

Directions:

  •  cut pickles into small manageable chunks
  • mix mayo and sour cream together in a bowl and slowly add all remaining ingredients (I always tend to add a little extra sour cream because I don't like the taste of mayo much but my mom always added equal parts)
of course with all recipes, when it comes to spices add it little by little and go by taste,
I like mine with alot of flavor so I add alot haha
I kinda just put this together as a guideline because honestly
I never measure I make it by taste alone

Sweet Heat Chicken Legs Recipe

I went to the supermarket yesterday and found a family pack of 6 chicken legs on sale for 5 dollars so I picked them up thinking I have no idea what I'm going to make with them because I am a boneless skinless thigh person, especially when using the slow cooker. I have tried to make breasts in the slow cooker and I don't know if its just the meat itself or if I just cook them too long but they are ALWAYS dry!
Along with the legs I had bought a bottle of sriracha chili sauce on sale at Superstore the day before ( yay for sales LOL) Ive never cooked with sriracha so I wanted to try something new.

Ingredients:

  • 5-6 Chicken Legs ( I'm sure this would make great wings or thighs as well)
  • 1/2 cup sriracha chili sauce
  • 1/2 cup honey
  • 2 tbsp sodium reduced soy sauce
  • 2 tbsp lemon juice
  • 1/4 cup chicken and rib BBQ sauce (or any BBQ sauce you have would be good)
  • 3 cloves of garlic 
  • flour or cornstarch (add as needed for desired thickness) I used about a tbsp of cornstarch diluted in a tsp of water

Instructions:

  • Begin mincing garlic, in a mixing bowl combine ingredients including garlic and mix well
  • dip chicken in sauce mixture to cover both sides and put in slow cooker, pour remaining sauce over the chicken
  • cover and cook on low for 5-6 hours 
  • I use a turkey baster to continue pouring sauce over the chicken the whole time to keep them saucy...yes, I'm a slow cooker peeker haha but you could use a spoon or just mix the chicken every once in a while
 this is what mine looked like after dipping and adding to slow cooker, yummy right!



** I cooked my legs in the oven for 25 minutes beforehand at 425 degrees, because they were frozen and I wanted to take off some of the fat from the chicken, i omitted this step because it doesn't really change much... but if you choose to do this step then cook for 3 hours in slow cooker or as long as you'd like the flavors to marinate for

Potato Bacon Soup (Tim Hortons dupe)

  My boyfriend had been requesting this for so long, his ultimate comfort food.
He loves Tim Horton's potato bacon soup but around here its almost impossible on any given day to find a location making it so I went on a mission to try and duplicate it and came across a recipe similar to this.
Now, my boyfriend eats ALOT so I make way more then this but for normal families this will be more then enough.

Ingredients:



  • 1 pound of Bacon Chopped
  • 1 medium Red Onion
  • 6 - 7 cups of potatoes cut into cubes
  • 2 cans of cream of chicken soup
  • 2 cups of sour cream
  • 2 1/4 cups milk
  • salt and pepper to taste
  • Fresh Chives or green onions (Optional)


  • Instructions:

     
    • First start with cutting your bacon and then frying it for about five minutes.
    • Add the chopped onions and saute 3-4 minutes. Drain and put aside.
    • Cook cubed potatoes in a large pot in 3 cups of water. Cook for 15 minutes or until the potatoes are soft (Do not drain, as the starch water will be used in the base of the soup)
    • Turn element down to low and add sour cream, cream of chicken soup,bacon and onions, and milk and stir well until thoroughly mixed.
    • cover and let simmer for 15 minutes to allow the soup to be brought up to temperature as well as to let the flavors soak in and mingle.
    This usually takes about 15 minutes for prep time and about an extra half hour cooking time. I would say it would feed about 4 adults or more with some left for leftovers, although in my house I make at least double this because my boyfriend enjoys taking it to work the next few days. I decided to go big and buy a loaf of sour dough to make a bread bowl, but I wouldn't again because a) it is huge and I wasn't able to eat the whole bowl and b) because it went soggy and unpleasant. I also think sour dough was just all in all not a good bread pairing for the soup and wont be trying it again LOL

    January 2013 Prive Box from Topbox



     So I received my January topbox in the mail today and I have to say I honestly wasn't REALLY excited about any of the products, mostly because I have most of what I got already in my bathroom. I have not tried the dark spot corrector before but I don't really have any dark spots to correct in the first place so this isn't very appealing to me either. This was one of the prive boxes they featured on the site that you could put on your wishlist, although I didn't add it to mine because of the fact I already use these products and it would ruin the surprise I hope to get each month, but it seems like it was sent to everyone this month regardless. 
    anyways, here are some pictures of what I got.


     It came in this white box, with the clinique logo on it. Its very crisp and clean looking.

    Clarifying Lotion 30ml sample size: I'm not quite sure how this is supposed to be lotion in all honesty. It is water thin, 
    and looks more like the purple clinique toner I already have..which works very well but I just cant see me using this product because of its perplexing consistency.

    Rinse off makeup solvent 60ml sample size: I already have this product, as I said above I already have most of the things I was given to sample in this months box. It works well at taking the makeup off but even though it says it is oil-free I find it leaves a very oily residue on my skin after, it may be some type of moisturizer though.


    Color surge eye shadow duo 1.6g sample size: I haven't tried these yet but I love the chrome case it comes in and the shine in both colors (I'm not a matte colored makeup person) cant see myself using the brush though but maybe ill give it a whirl just to say I did.

    Even better clinical dark spot corrector 7ml sample size: Like I mentioned earlier I haven't used this product, I don't have dark spots so I don't have much use for it...maybe ill see if it works on under eye bags LOL

    That's about it for this month, 
    I hope I get the benefit box I wish listed for next month!

    Stuck in the house! eep.

    Welcome, If you've seen my blog before you'll realize that I have deleted all prior posts and have decided to take it in a new direction, which in all honesty has no direction at all at this point.
    I'm fairly new to blogging, but I figure in the weeks to come I will have found my niche....HOPEFULLY. I'm a new mom, or atleast it still feels new and I'm not at all adjusted LOL
    my daughter is actually 9 months old now but I still feel out of my element, not at all like those tv moms or really any mom who just fits perfectly into the role and seems to be able to juggle a million things at any given time with a baby on her arm, yeah... definitely not me.
    Anyway... my name is Samantha, I prefer Sammie though but whichever is fine I suppose. I'm 23 and a stay at home mom, I have a wonderful daughter and an awesome boyfriend. At this very moment I'm litterally stuck at home,I have the flu which i coincidentally got from being in a hospital when my daughter had to get a surgery...worst time of my life. We spent a week in there that seemed to drag on for months and I used all the data I had for the month trying to occupy myself. It honestly hasn't been very good weather here anyway so I can't really complain. I should probably get back to baby, who is refusing her bottle without cuddles to accompany it, I just wanted to check in and say hi!
